Ravioli with kuchmachi, oyster-mushroom chakapuli, duduk (slow-braised apricots with nuts) — all of Gia Khuchua's cuisine rises slightly above the everyday, while the mini khinkali in pepper sauce proved such a hit that imitations spread across Russia. Saperavi is recommended as a pairing, while halibut chraime and trout in grape leaves are matched with whites made from Krakhuna and Mtsvane grapes; the wine list has received several Wine Spectator awards. After meeting the Tbilisi-born chef on the TV show Hell’s Kitchen in the 2010s, restaurateur Aram Mnatsakanov (Probka, Mina, and others) conceived a Georgian restaurant with modern cuisine and interiors free of forced folkloric motifs. Thus Mama Tuta, named after the mulberry tree, first bloomed in St. Petersburg and then successfully took root on Malaya Bronnaya.
