This project by Peruvian chef Virgilio Martínez, one of the biggest innovators in contemporary gastronomy, is named after the olluco, a plant cultivated in the Andes. Enjoy the architectural design by Ishmael Randall, video art with landscapes above the bar, and imaginative tasting menus by chef Nicanor Vieira’s team (there is also a small à la carte menu): for example, the Sacred Valley of the Incas appears as «Ostrich escabeche. Andean grains. Chulpi corn. Duck. Huancaína», while Machu Picchu becomes a cocktail of «Pisco. Strawberry. Marigold». This entire symbiosis of flavors, colors, and textures creates such a vivid, vibrant installation that a visit to Olluco becomes an existential experience — a journey from national identity to global unity.
