At this restaurant on Patriarch Ponds, the steaks really do sizzle at 800°C in imported ovens — that sear retains the most juice. Their approach to the product is academic: meat from Russia, Argentina, Uruguay, and Japan, with different aging periods, breeds, and feed types.
