A tandem of restaurateurs Vladimir Perelman (Ryba Moya, I Like Wine, and others) and Dmitry Blinov, boss of Duo, Harvest, and other iconic St. Petersburg venues. The Duo Band gastro-school is known for signature dishes like cabbage with truffle and dried beets with cherry, not to mention skillful nuancing: apple salsa with hamachi, truffle caramel with coffee cream. The level of refinement is extraordinary: plates with foxes were ordered from French makers Gien, the house bread includes a scalded rye loaf with figs and a keto version with walnuts, and they make their own soda, coffee (the beans are aged in old rum barrels), and sage tea, the herb that gave the project its name. For Wine Form evenings, they invite winemakers from STN to Usadba Divnomorskoye.
