This is the headquarters of chef Anatoly Kazakov, a connoisseur and champion of regional native varieties and local specialties. In Tula and Moscow Oblasts, farmers grow multicolored carrots, tomatoes, and beets for him; in Tver Oblast — giant pumpkins: with all this bounty, Selfie regularly hosts collaborative farm dinners with guest chefs. For the main menu, Kazakov deftly mixes sorrel, ryazhenka, and tarragon with porcini mushrooms and black chanterelles. He promotes Rostov duck, set honey, and horseradish leaves, pickled and paired with scallop and feijoa. Seasonal fruits and berries shine at the bar too: they might make a Negroni with cherries, a non-alcoholic fizz with plum, mulled wine with quince or Isabella grapes.
