The modern culinary history of St. Petersburg kicked off with Aram Mnatsakanov's first Probka in 2001. Today, its Tsvetnoy Boulevard branch is a cornerstone of Moscow's dining scene. Half the dishes on the menu are legends in their own right: the hall of fame includes truffle pizza and Roman pasta, Sicilian-style octopus and Mediterranean fish soup, burgers and tiramisu served by the spoonful from a large bowl. Their own black caviar and prosecco, an endless list of awards including separate ones for the wine list and service: for Italian restaurants in Russia, Probka has long been the benchmark, the standard, and the arbiter.
