Here, it's wild fish and other seafood delivered from the Atlantic, Kamchatka, and everywhere in between. Sashimi is assembled like fine jewelry from tuna and hamachi, the gyoza comes with crab and shrimp, and there are rolls with eel and caramelized salmon. Omakase dinners come from chef Dmitry Tyan, and check the menu for sake — a spectrum of styles and regions, all aged in barrels made from Japanese cedar or highly polished rice. The design is exceptional, whether it's the decorations, the lighting, or especially the sound. The sound system and vinyl collection rival the bar and kitchen in their meticulousness.
