This is an institution shaped by meaning: in the early 2010s, they invented and showcased a new era of gastronomy and cocktails, training and inspiring legions of followers. Here's a quick checklist: brains in batter with yolk and caviar, horse tartare pressed with an iron, and seasonal speciale dishes. Thursdays are for dirty martinis with a quail egg, and then there's the Pedro Manhattan with sherry and cherry-infused bourbon. The former has its own counter, while the latter comes from a bourbon machine. Coasters with ironic sketches based on drawings by Evgeny Samoletov, one of the founders, and above all — the extraordinary art of living, drinking, and partying large and well, embodied by the bar's patriarch Slava (Vyacheslav Mikhailovich!) Lankina.
